Whenever we have family come to stay with us I use it as the perfect excuse (not that I really need one) to make all of those recipes I’ve been thinking about for awhile but just haven’t gotten around to making. I’d been thinking about trying this no bake 3 ingredient Clinkers Fudge ever since I made my Threeingredient Mars Bar Fudge a couple of months ago. As well as being a huge fan of Clinkers, I thought they would be the perfect texture to add to my favourite smooth and creamy fudge recipe.

Luckily I was right. The crunch of the Clinkers was the perfect addition to the soft fudge and our guests managed to eat half of the batch in just a couple of hours!

If you are looking for a recipe which is easy to make, doesn’t require many ingredients and is perfect for anyone with a sweet tooth, this no bake Clinkers Fudge recipe is for you!

What are clinkers. I am sorry but I haven’t a clue what they are. Are they called something else in Canada. Or is it my age?

Hi Margaret, I’m not sure if you can buy them in Canada. They are a hard lolly covered in chocolate, if you can’t find them you can use your favourite lolly instead 🙂

Clinkers has a whole different meaning here in the UK (check the Urban Dictionary), it made my laugh when I first saw the recipe title, especially when I read its a candy covered in chocolate 😀
Anyway enough of that…sorry! 🙂 This sounds a great recipe for kids and adults with a sweet tooth and the fact it’s only 3 ingredients…bonus!

FAQs

How to rescue fudge that won't set? ›

OPTION 3) Sieve together some powdered sugar and cocoa powder, and gradually work this into your unset fudge until it reaches the consistency of dough, then roll out and cut into squares, or shape into balls and then roll in powdered sugar (roll the balls in icing sugar, not yourself).

Why is my condensed milk fudge not setting? ›

If you didn't reach the correct temperature during the cooking process, it might not set properly. Use a candy thermometer to ensure that you reach the recommended temperature. Overcooking or Undercooking:Solution: Cooking the fudge for too long or too short a time can affect its texture.

What makes fudge thick? ›

Tiny microcrystals in fudge are what give it its firm texture. The crystals are small enough, however, that they don't feel grainy on your tongue, but smooth. While you ultimately want crystals to form, it's important that they don't form too early.

Why isn't my fudge thickening? ›

If the fudge is very soft and slightly chewy then it is possible that it did not quite cook to soft ball stage and next time the mixture should be cooked to a slightly higher temperature (soft ball is 112-116c/235-240F and a sugar or candy thermometer can help).

What is the secret to smooth fudge that is not gritty? ›

Once the sugar has dissolved and the mixture has come to a boil, do not stir it. If you do, the sugar can crystallize, giving your fudge a gritty texture. As you beat the fudge, pay attention to color and texture. Once the fudge loses its sheen and thickens, put down your spoon.

What happens if I use sweetened condensed milk instead of evaporated milk in fudge? ›

Don't Substitute One for the Other

Thus, using condensed milk in a recipe that requires evaporated milk will yield an overly sweet dish.

How do you make homemade fudge firmer? ›

Harden the fudge: Place your container or tins in the fridge for 2 hours, which is the time it takes for the fudge to set. Once it's hardened, cut the fudge into 12 pieces or remove it from the muffin tins. Store in the fridge or the freezer (if you don't devour it right away).

Why is my fudge not creamy? ›

If the sugar crystals are not properly dissolved before cooling, they can create a gritty texture. To avoid this, ensure that you stir the fudge mixture consistently and remove any sugar crystals that form on the sides of the pan using a wet pastry brush.

What can you do with failed fudge? ›

My current idea is to make brownies, heat the failed fudge until it becomes a sauce and put it in the middle of the brownies.

Should I stir fudge while boiling? ›

Stir the ingredients to dissolve the sugar until the mixture comes to a boil. If your recipe uses milk, stirring will keep the mixture from curdling. But once it reaches about 236–238 degrees F/113–114 degrees C (the "soft-ball" stage), do not stir it or even shake the pan.

What happens if you boil fudge too long? ›

The amount of time you cook fudge directly affects its firmness. Too little time and the water won't evaporate, causing the fudge to be soft. Conversely, cook it too long and fudge won't contain enough water, making it hard with a dry, crumbly texture.

What makes fudge firmer? ›

Cooking is necessary to dissolve sugar crystals and to evaporate part of the water in the cream. The length of this step has a direct impact on the firmness of the fudge.

Why did my fudge turn out like taffy? ›

If the temperature is too low, the fudge will be too soft and sticky, and if it's too high, it will turn into a hard, crumbly mess. The ideal temperature to cook fudge is between 232-234 degrees F (111-112 degrees C).

How do you know if fudge is thick enough? ›

You know it's ready when a small amount of the mixture dropped into a glass of cold water sets into a soft ball that you can lift out with a teaspoon and pinch between your fingers.

What do you do with unset fudge? ›

If it feels a little too soft then boil for a couple minutes more and test again. The unset fudge can be stored in a sealed container in the fridge and used as an ice cream sauce. It can also be frozen in an aluminium pan as it will become firmer and can be served direct from the freezer.

Why did my fudge stay soft? ›

If there is too much evaporation, when the cooking time is too long, there will not be enough water left in the fudge and it will be too hard. Conversely, if the cooking time is too brief and there is not enough evaporation, too much water will remain and the fudge will be too soft.

Can I freeze fudge to make it set? ›

Freeze to set: Move the pan to the freezer to speed up the set time. Cut and enjoy: After 30 minutes in the freezer cut the fudge into squares. Enjoy!
